Our story
We created the Louisiana Restaurant out of a passion for the culinary arts and a love for New Orleans, where we immersed ourselves in the culture and unique flavors of Creole cuisine for seven years. This city, known as the Big Easy, is famous worldwide for its excellent jazz music, exquisite cuisine, and a laid-back style found nowhere else. Our restaurants will take you on a journey through the flavors and atmosphere of New Orleans with authentic Creole dishes, original swing music, and helpful and friendly service.
Our first restaurant was established in 2012 on Mostowa Street in Toruń. Currently, we proudly welcome you to the Court of Artus on the charming Old Market Square in Toruń, as well as to the heart of Bydgoszcz, on the picturesque Długa Street. It is an honor for us to open our doors and share our culinary experience with you.

Creole Cuisine
Creole cuisine is a unique fusion of French, Caribbean, African flavors, and culinary influences from the southern United States. Combining new spices with local ingredients has given rise to exceptionally interesting and aromatic dishes. Boldness and spiciness are inherent characteristics of Creole cuisine. It was in Louisiana that the recipe for Tabasco sauce was born.
In our menu, you will find traditional Creole dishes such as aromatic gumbo and jambalaya, delicately spiced coconut etouffee, creamy chowder, and crispy pirogue. In our dishes, you will often encounter exotic ingredients not commonly found in Polish cuisine, such as okra, cassava, dried sweet potatoes, Louisiana sauce, and a "blackening" spice mix.

Blackening and the Blackened Style
In our kitchen, we add a unique character to our dishes by using an exceptionally aromatic and gently spicy Creole spice mix called "blackening." We prepare it on-site with a blend of 10 different herbs and spices.
The culinary method known as "blackened style" involves generously coating meat, fish, or seafood with this special seasoning, followed by grilling, frying, or baking, resulting in the "blackening" process. This gives a distinct shade of brown-black to the dishes and, more importantly, a unique flavor.
In our menu, you will find examples of this culinary technique in dishes such as Blackened Salmon, Caribbean-style Chicken, or Louisiana Steak.

BBQ Style
In our restaurant, you`ll find typical American culinary accents as we reach back to its roots to offer you dishes in an authentic barbecue style.
The word "barbecue" likely derives from the Native American term "barbacoa," which described the slow-roasting of meat over smoldering coals. It`s this lengthy roasting process that plays a crucial role in creating true BBQ, giving it exceptional tenderness and preserving the juiciness of the meat.
In our menu, you will find our unique specialties such as slow-roasted ribs marinated in sweet BBQ sauce and slow-roasted pork neck in Kentucky Bourbon BBQ sauce. These dishes exemplify the essence of authentic BBQ, providing a delightful and savory experience.

Steaks and Seasoning
Steaks are a specialty of American cuisine, and that`s why they hold a special place on our menu. In addition to Creole-style "blackened" steaks, we would like to invite you to try our seasoned steaks and those served on volcanic stone.
The secret to our steaks lies in the aging process giving it not only the right tenderness but also a unique aroma. We age beef exclusively from noble meat breeds such as Hereford, Red Angus, or Limousin. Through over 14 days of aging, our steaks acquire extraordinary tenderness, exceptional flavor, and character.
In our menu, we also present steaks served on a volcanic stone heated to over 300°C, allowing our guests to personally decide how to grill their meat. This interactive serving style provides a true feast for the senses.

Our burgers
Our beef burgers steal the hearts of those who appreciate refined flavors. Each of our burgers features 200g of carefully selected and hand-ground beef, enriched with the aromatic "blackening" seasoning. We serve them in a buttery Brioche bun with skin-on fries and our signature Lafayette sauce, which pairs perfectly with the juicy meat. Our burgers consist of 100% fresh beef, allowing our guests to choose how they want their meat to be done.
For beef enthusiasts, we offer an extraordinary interpretation - our burger without the traditional bun. Our HIS HIGHNESS THE BURGER consists of two beef patties with carefully chosen toppings in between, creating a harmonious flavor.
We haven`t forgotten our guests who prefer alternative flavors. For vegetarians, we`ve prepared unique burgers featuring crispy oyster mushrooms that will surprise your taste buds and famous Lindy McCartney vegan patties.
